Beet Lime Mint Cooler

Fresh mint and lime make a refreshing beet juice cooler with a crisp sparkling finish.

Ingredients

  • •10 fresh mint leaves
  • •2 tablespoons fresh lime juice
  • •1 tablespoon maple syrup
  • •1/2 cup Pomona Organic Beet Juice
  • •1 1/2 cups chilled sparkling water
  • •Ice and lime wedges, for serving

Instructions

    Gently press the mint with the lime juice and syrup in a pitcher; avoid shredding the leaves. Stir in beet juice.

    Divide between ice-filled glasses, top with sparkling water, and garnish with lime.

Recipe tip: Strain out the mint before pouring if you prefer a drink without loose leaves.
