Ingredients

  • •1/2 cup Pomona Organic Beet Juice
  • •1 cup white grape juice
  • •1/2 cup water
  • •1/4 cup granulated sugar
  • •1/8 cup fresh lemon juice

Instructions

  1. 1

Combine the water and sugar in a small saucepan. Warm over medium-low heat, stirring until the sugar dissolves; there is no need to boil. Let cool to room temperature.

  2. 2

Stir in the beet juice, white grape juice, and lemon juice. Pour into an 8-inch square freezer-safe metal pan.

  3. 3

Freeze for 1 hour, then scrape the frozen edges toward the center with a fork. Continue freezing, scraping every 30–45 minutes, until the mixture forms loose ice crystals throughout, about 4–5 hours total.

  4. 4

Fluff with a fork and spoon into chilled bowls or small glasses.

Recipe tip: If the granita freezes solid, leave it at room temperature for 10–15 minutes, then scrape firmly with a fork to restore its flaky texture.
